Not only are these meatballs perfect mixed in with pasta but they make excellent appetizers at parties. This recipe is super simple yet delicious. Also, this recipe is very kid friendly (approved by a picky 10 year old) :)
Ingredients:
1.5 ground turkey meat
2 egg
4 TBSP olive oil
1 cup bread crumbs
1 tsp salt + 1 tsp pepper
1-2 tsp parsley flakes
1/4 cup chopped fresh basil
1/4 cup diced onions
1 + 1/4 cup Parmesan or colby jack cheese
2 cups Ragu or pasta sauce
Directions:
In a bowl combine pepper, salt, bread crumbs, basil, onion and 1 cup cheese. Add in the eggs and turkey. Mixed thoroughly and let turkey mix sit in fridge for 2-4 hours.
Form into meatballs.
Add 2 TBSP of olive oil to a sauce pan and begin on medium heat. Add meatballs to pan and cook. Add the other 2 TBSP of olive oil to the second batch of meatballs (depending on how big your cooking pan is).
When all the meatballs have finished cooking, transfer them to a plate. Next, fill the saucepan with sauce and turn stove top on low heat. Replace the meatballs back into the saucepan. Cover pan.
Add the other 1/4 cup cheese to the pan. Serve hot and feel free to add more parsley flakes and olive oil on top.
